Salami with perch and queen of Trasimeno eggs

Another recent experiment is this salami which combines meat and fish: pork, perch fillet and carp roe.
Once the fillet has been prepared, it is added to the dough together with the eggs and mixed with the pork, spiced, dried and then aged for about two months.
As contrasting as the flavors may seem, they actually blend together perfectly to recreate something absolutely innovative.
