Wild boar meat can never be lacking in Tuscan and Umbrian cuisine , it has always represented that note of home cooking where the flavors and smells of nature are combined with the taste of genuine meats with an intense flavor.
Wild boar salami represents the essence of Tuscan home-made butchery, enriching the already well-known Umbrian tradition in the production of quality cold cuts and sausages .
To prepare the wild boar salami in an artisanal way, defatted wild boar meat is carefully chosen to which a part of pork is added which gives the salami a softer consistency and a sweeter flavour. Our expert butchers finely grind the wild boar and pork meat adding spices including garlic, pepper and natural flavors to the mixture. The salami is then dried, passing through the maturing rooms for about 40 days. This period gives the boar meat the right consistency, harmonizing the typical "wild" flavor and making it pleasant for every palate.
The wild boar salami can be sliced with a not too thin knife and arranged on a cutting board together with cheeses such as pecorino di Pienza or hand-cut raw ham . It is a cured meat to be combined with full-bodied red wines from Tuscany or from the Trasimeno hills.
