Bean salami is one of the products that best expresses the link with the Lake Trasimeno area. In fact, the bean is a legume historically widespread in these areas which, after having risked extinction, was relaunched as a slow food presidium. When the salami is cut, the two-tone color is immediately identified due to the reds of the pork on one side and the whites of the bean on the other. After a maturation of about 30 days, the mixture of softness and crunchiness can be appreciated as the bean, after being boiled and mixed together with the meat, with the maturation acquires a different consistency, no longer soft like the classic one of legumes.
